Football season is finally upon us, and it’s a fantastic time of the year for a few reasons….
Mainly, because football is my favorite sport and it’s a good use of my time to watch hours of it every weekend. Even though I experience yearly disappointment and frustration from being a Chiefs fan, I still watch every televised game.
Secondly, football season rocks because of beer and great food. I like to have a spread for guests to eat while watching a game, but don’t like to spend all day slaving over it. So, here’s my favorite gameday recipe, and even extremely inept cooks can make it:
Nicci’s Better Than Crack Dip
Ingredients: 1 pound of bulk pork sausage, 1 block of cream cheese, and 1 can of Rotel
Directions: Crumble sausage and cook in skillet until brown. Drain and rinse with hot water. Mix the cream cheese and can of Rotel with the cooked sausage and heat through until cream cheese is smooth. Serve with chips or crackers. (I think Tostitos scoop chips are best.)
Just 3 ingredients, and just about impossible to screw up. Now that I’ve given you the easiest dip in the world for football watch parties, I want your recipes. 2 things: it has to be idiot-proof easy, and it has to taste awesome. I’m waiting…..

MU Fans are the Greatest………
After a disappointing OUTCOME to last nights game between Mizzou and Nebraska, I can’t tell you how proud I was of the large sell out crowd of the Mizzou fan base that weathered torrential rain and stay for the whole game. To me this is a sign of national football program that has arrived. The rebuilding of the Mizzou football program is a long and arduous process. No doubt Coach Pinkel and his staff have laid the foundation for success, but building a long lasting brand takes time, commitment, hard work and consistency.
Last nite, I feel that the Mizzou Fans sent a strong message to the nation(on ESPN) that Mizzou is a national program with a big time fan base of students and community support. This will help with national recruiting.
I know the loss was disappointing.
I know that the Monday morning quarterbacking will begin and some questions will arise about certain play calls, personnel, etc. That happens everywhere after every loss, but let us not lose heart or faith. Continuous Improvement is the mantra for any highly successful individual, organization or sports team. Coach Pinkel and Co. knows this and will strive to give us the best program in the nation.

I agree…Mizzou fans are the best. I was also VERY impressed with the amount of people who sat in the miserable weather and cheered on our Tigers.

Just read your bio… Gadsden huh? I grew up outside Birmingham in Leeds. I was just up in Jeff City for a couple of weeks for some military training, and I found this station, and never looked any further! I think the only thing more frustrating that being a Chiefs fan is being a Jaguars fan! I’ll gladly send you some tailgating recipes, just let me know where to send them… Roll Tide!!!
